Fresh rhubarb

Freshly harvested rhubarb

I may not have berries or tree fruits, but I have plenty of rhubarb. I harvested this pan full yesterday afternoon, washed it, chopped it, and froze it on cookie sheets. Today I’ll pop it into freezer bags and wait for company so that I can make a rhubarb crisp.

I’m tempted to try a pie, but honestly, my double-crust pies leave something to be desired. I’m loathe to waste luscious rhubarb on a soggy, disappointing pie. Maybe I could try a rustic tart, which would be more like a pizza; those I can do!

Feel free to share your rhubarb recipes (especially if you have a no-fail pie recipe)!

Yay on your sprouts! Isn’t it fun?

Here is my favorite rhubarb recipe. My daughter makes this on her own. She absolutely loves to go out and pick out her own rhubarb stalks for her recipe. I am so proud of her when she does that!

She even took a bunch of rhubarb with her to dance camp, so she and grandma could make the recipe together.

I also like to make rhubarb jam, which turns out almost like an apple butter. I can that and we eat it all year ’round.
